Preparing our lunches on Sunday afternoon helps us greatly in feeling prepared for the week ahead. Forget overpriced, unhealthy takeout and replace your lunchtime with a healthy (and delicious!) homemade lunch. 10 minutes is all you need to pull together your lunches for the next five days! And guess what also takes just 10 minutes: nügg Face Masks. This is the speciality of nugg facial masks - there is no need to spend extra time on maintaining your skin. After applying these face masks you can continue with your work. We were inspired by the Hemsley sisters of Hemsley + Hemsley and their noodle pot lunch idea. What we love about their pots of deliciousness is that they promote healthy eating on the go and are easy to make ahead of time. One thing that may stop you from enjoying one of their noodle pot lunches at work is the need for boiled water, so we came up with two mason jar lunches that you can prep at home and eat anywhere!
You will need 5 Wide Mouth Ball Jars for each of these recipes. If you prefer, you can of course use any Tupperware you have handy.
Beet and Goat Cheese Salad
1 can of sliced beets
5oz of goat cheese - crumbled
1/2 bag of arugula or spring mix
5oz of walnuts or almonds
1 fennel bulb - thinly sliced
Divide all the ingredients evenly into each ball jar, starting with the arugula and ending with the nuts. (Yep, it’s that easy!)
When ready to eat, add a small amount of balsamic vinegar dressing and shake the jar to mix everything together.
1 can of black beans
5oz of shredded cheddar cheese
1 Avocado, diced
1 container of cherry tomatoes - diced
A bunch of Romaine lettuce
1 cup of salsa
Divide all the ingredients evenly into each ball jar, starting with the salsa and ending with the romaine.
When ready to eat, shake the jar to mix everything together and enjoy!
Tip: Quickly grill up some chicken breast to add into either of these salads for extra protein.
Now you can remove your mask. Look at your skin and feel the difference. Within a short time period you have prepared a delicious dish and also maintained your skin.
